Research topic:

In brewing there is an increased demand of ale beer with novel and diverse flavours. The TRUE-YEAST project aims at developing novel ale beer yeast cultures with hop-boosting phenotype and at implementing DNA barcoding procedures for strain authentication over the entire production chain of brewing yeast starters. To reach these general objectives the research activities will be organized into four work-packages (WP), as follows: WP1: parental strains selection from niches alternative to beer and phenotypic screening; WP2: creation oh intra and inter-species hybrids by GMO approaches; WP3: validation of hybrids candidates for fermentative efficiency and “hop-boosting”-phenotype; WP4: authentication of yeast starter from culture deposit to industrial scale lyophilization by implementation of DNA barcoding techniques in the C&Q system.
